		<p>So apparently the sitting time most bread makers left behind makes important changes the physical characteristics of the bread.  These days "enzymes" are used instead of the yeast-process and the bread ends up softer than possible and preserved longer than normal.  And so a campaign has been started to encourage those of us baking bread, to bake it the old fashioned way.  Recipe included!  I&#039;ll be sure to try later this week when I have a few moments.  Who knows.. I might end up baking my own bread instead of buying it for three dollars a loaf.</p>
