		<p>Coconut-Curry Pumpkin Soup<br />
<br />
1 tblsp olive oil<br />
1 onion, diced<br />
4 cups chicken broth<br />
1 can (15 oz) pumpkin puree<br />
1 can (15 oz) cannellini beans<br />
¼ tsp salt<br />
¼ tsp white pepper<br />
1 tsp Vindaloo Seasoning (Penzeys)<br />
1 tsp Maharajah Seasoning (Penzeys)<br />
½ tsp Rogan Josh Seasoning (Penzeys)<br />
¾ cup coconut milk<br />
<br />
Saute onion in olive oil until translucent, about 5 minutes.<br />
<br />
Add broth, pumpkin, beans and seasonings. Bring to a boil; reduce heat and simmer uncovered for ten minutes.<br />
<br />
Puree soup in small batches in blender; return to pot.<br />
<br />
Over low heat, stir in coconut milk until well-blended; remove pot from heat and serve.</p>

Okay I made this, and the cream mixture is to die for.  But I would recommend making it in a pan smaller than 9x13 because there wasn&#039;t enough cream to make a thick enough layer.  Also it used a lot more than 1 package of lady fingers - I bought three packages just to have some extra, and used them all.  Also, not all ladyfingers are alike - Ree (the pioneer woman herself) mentioned that her ladyfingers were delicate and crispy but the ones I bought were more like little pieces of shaped spongecake.  But all in all, the tiramisu was divine, and the brandy was a nice touch as well.. although my husband made a sad sort of face when I told him I used up 3/4 cup of his brandy.  :)</p>
