		<p>Coconut-Curry Pumpkin Soup<br />
<br />
1 tblsp olive oil<br />
1 onion, diced<br />
4 cups chicken broth<br />
1 can (15 oz) pumpkin puree<br />
1 can (15 oz) cannellini beans<br />
¼ tsp salt<br />
¼ tsp white pepper<br />
1 tsp Vindaloo Seasoning (Penzeys)<br />
1 tsp Maharajah Seasoning (Penzeys)<br />
½ tsp Rogan Josh Seasoning (Penzeys)<br />
¾ cup coconut milk<br />
<br />
Saute onion in olive oil until translucent, about 5 minutes.<br />
<br />
Add broth, pumpkin, beans and seasonings. Bring to a boil; reduce heat and simmer uncovered for ten minutes.<br />
<br />
Puree soup in small batches in blender; return to pot.<br />
<br />
Over low heat, stir in coconut milk until well-blended; remove pot from heat and serve.</p>

		<p><font size="3" face="georgia,times new roman,times,serif"><br />It's cold outside.  So, in a determined attempt to be warm, I made soup.  Not just any soup - some delicious, savory, very<em> fall</em> tasting soup.  Yes, it's winter, but desperate times call for desperate measures.<br /><br /></font><font size="3" face="georgia,times new roman,times,serif"><b style="">Pumpkin Sausage Soup</b></font><br /><font size="3" face="georgia,times new roman,times,serif"> </font><br /><font size="3" face="courier new,courier,monospace">Olive Oil</font><br /><font size="3" face="courier new,courier,monospace">1 large carrot, small dice</font><br /><font size="3" face="courier new,courier,monospace">2 ribs celery, small dice</font><br /><font size="3" face="courier new,courier,monospace">1 small yellow onion, chopped</font><br /><font size="3" face="courier new,courier,monospace">2 cloves garlic, minced</font><br /><font size="3" face="courier new,courier,monospace">12 oz maple breakfast sausage links, sliced into small pieces</font><br /><font size="3" face="courier new,courier,monospace"> </font><br /><font size="3" face="courier new,courier,monospace">¼ cup dry white wine</font><br /><font size="3" face="courier new,courier,monospace">½ tsp poultry seasoning</font><br /><font size="3" face="courier new,courier,monospace">Scant amounts of nutmeg, cinnamon and black pepper</font><br /><font size="3" face="courier new,courier,monospace"> </font><br /><font size="3" face="courier new,courier,monospace">4 cups chicken stock</font><br /><font size="3" face="courier new,courier,monospace">½ to 1 cup ditalini pasta - more for a thicker soup</font><br /><font size="3" face="courier new,courier,monospace">½ can (approx ¾ cup) canned pumpkin</font><br /><font size="3" face="courier new,courier,monospace">¼ cup heavy cream</font><br /><font size="3" face="courier new,courier,monospace"> </font><br /><font size="3" face="courier new,courier,monospace">Heat a Dutch oven over medium heat.  Drizzle with olive oil.  Add carrots, celery, onion, garlic andsausage.  Sauté until sausage is fully cooked and vegetables are tender. Deglaze pan with white wine and add chicken stock, poultry seasoning, nutmeg and cinnamon and a few grinds of black pepper.   Bring soup to boiling and add pasta; cook for ten minutes or until pasta is al dente. Stir in pumpkin until blended, and turn off heat.  Add cream and stir to blend.  Season soup with salt and pepper if necessary.</font><br /><font size="3" face="courier new,courier,monospace"><br /></font><br /><font size="3" face="georgia,times new roman,times,serif"><br /></font></p>

		<p><font size="3" face="georgia,times new roman,times,serif"><br />There are those who would disdain to call this true chili, and to those people I say, <em>No Soup</em></font><em><font size="3" face="georgia,times new roman,times,serif"> </font></em><font size="3" face="georgia,times new roman,times,serif"><em> For You</em>!<br /><br />-------------<br /><br /><b>Chicken Chili</b><br /><br />1 1/2 pounds boneless skinless chicken, cut into 1/2 inch cubes<br />1 onion, diced<br />3 tblsp vegetable oil<br /><br />1 can cannellini beans, rinsed and drained<br />1 can (14 oz) diced tomatoes<br />1 can (14 oz) diced tomatoes with green chiles<br />1 cup frozen corn<br />1 garlic clove, minced<br /><br />1 tsp salt<br />1 tsp cumin<br />1/2 tsp celery salt<br />1/2 tsp ground coriander<br />1/2 tsp pepper<br /><br />In dutch oven, saute chicken and onion in oil until onion is translucent and chicken is fully cooked.  Stir in remaining ingredients.  Bring to a boil; reduce heat, cover and simmer for thirty minutes.<br /><br /><br /></font></p>

		<p><font size="3"><font face="georgia,times new roman,times,serif">Some yummy, <em>easy</em>, comfort-food soup... perfect for fall.<br /><br /><b>Pasta Fagioli</b><br /><br />1 pound mild Italian sausage<br />1 large onion, chopped<br />2 garlic cloves, minced<br />4 cups water<br />1-2 cans great northern beans<br />1-2 cans petite diced tomatoes<br />32 oz chicken broth<br />1 cup uncooked elbow macaroni<br />1/4 tsp pepper<br />2 cups fresh spinach leaves, cut into strips<br /><br />In a large saucepan, cook sausage over medium heat until no longer pink.  Add diced onion and cook until translucent.  Add garlic cloves and cook until fragrant, 1-2 minutes.<br /><br />Add the water, beans, tomatoes, broth, macaroni and pepper.  Bring soup to a boil.  Cook for 8-10 minutes or until macaroni is tender.<br /><br />Reduce heat to low.  Add spinach; cook 2-3 minutes or until spinach is wilted.<br /><br /></font></font></p>
