Mists In The Mountains<br />

Early dawn, the mists are,<br />
swirling, twirling, damp and gray.<br />
Surrounding me<br />
taking me into its arms.<br />
Calling, beckoning, whispering softly<br />
it calls to me<br />
draws me near.<br />
Telling me I have nothing to<br />
fear<br />
I follow, listening, feeling.<br />
<br />
Early dawn, the mists are,<br />
swirling, twirling, damp and gray<br />
calling me.<br />
I feel a presence with me.<br />
Reaching out my hand, touching,<br />
grasping,<br />
warmth and comfort fill my<br />
being.<br />
And I know with out seeing<br />
I have felt love.<br />
Through the mists you<br />
reached for me,<br />
and guided my steps to thee.<br />
Love filled our hearts,<br />
and our souls became one.<br />

Weâ€ve all heard the plastic bag horror storiesâ€"the billions of bags discarded every year that wind up polluting oceans, killing wildlife and getting dumped in landfills where they take up to 1,000 years to decompose. Researchers have been wracking their brains for years to figure out a solution. But leave it to a Canadian high school student to leave them all in the dust. Daniel Burd, an 11th grader at Waterloo Collegiate Institute, has discovered a way to make plastic bags degrade in as little as three monthsâ€"a finding that won him first prize at the Canada-Wide Science Fair, a $20,000 scholarship, and a chance to revolutionize a major environmental issue.<br />

Burdâ€s strategy was simple: Since plastic does eventually degrade, it must be eaten by microorganisms. If those microorganisms, as well as the optimal conditions for their growth, could be identified, we could put them to work eating the plastic much faster than under normal conditions.</b></p>

<br />
    * 2 small organic red kuri or kabocha squash (about 3 pounds total)--washed, halved lengthwise and seeded<br />
    * 5 tablespoons unsalted butter, 3 tablespoons melted<br />
    * 3 tablespoons dark brown sugar<br />
    * Salt and freshly ground pepper<br />
    * 6 ounces vacuum-packed whole roasted peeled chestnuts (about 1 cup)<br />
    * 12 thyme sprigs<br />
    * 1/2 cup red currants or seeds from 1 pomegranate<br />
    * 1 1/2 tablespoons pomegranate molasses (see Note) <br />
<br />

<br />
   1. Preheat the oven to 350Â°. Set the squash on a large rimmed baking sheet, cut sides up, and brush with the 3 tablespoons of melted butter. Sprinkle the sugar in the cavities and season the squash with salt and pepper. Turn the squash over on the baking sheet and roast for about 1 hour, or until tender and browned at the edges.<br />
<br />
   2. Meanwhile, heat the remaining 2 tablespoons of butter in a medium skillet. Add the chestnuts and thyme sprigs and cook over moderate heat, stirring occasionally, until the chestnuts are lightly browned and glazed with the butter, 8 to 10 minutes. Discard the thyme sprigs.<br />
<br />
   3. Cut each squash half into 4 wedges and arrange on a large platter. Sprinkle with the glazed chestnuts and the red currants. Drizzle the squash with the pomegranate molasses and serve.<br />
<br />
MAKE AHEAD The baked squash halves can be refrigerated overnight; rewarm in the oven before drizzling with the molasses.</p>
